Now you need to coat the drumstick well with the marinade and marinate for at least 2 hours, or you can leave it overnight. It is advisable to turn our meat over at least once during marinating.

Cut several large pieces from a large fillet into “burdocks”, as thick as chops, but wide and long.

Drain the syrup from the pineapples and marinate the meat in it. Place in a cool place for about three to four hours, more if possible.

Cut the pepper into strips, champignons into small pieces. Grate the cheese coarsely. Cut the garlic into thin “petals”. Cut half the pineapples, leaving the most beautiful pucks for decoration. Place wooden skewers in water for a couple of hours.

Place the turkey on cling film to form a large layer. Place the filling on one edge: mushrooms, half the cheese, olives, leaving a dozen, sweet peppers, pieces of frozen butter. Helping with film if necessary, roll into a roll. You can tie the roll with thread, always white, if there is a danger that the roll will unravel.

Carefully place the roll in the sleeve. Bake at 180-190 degrees for about one and a half hours.

Remove the turkey and cut the sleeve. Sprinkle cheese on the top of the roll, arrange pineapple rings, insert an olive in the center of each and attach the entire decoration with a skewer.

Return to the oven, increase the temperature to 200-210 degrees and brown for about 15 minutes.

It would be nice to serve this dish with pickled fruit as a side dish, but you can also use mashed potatoes or salad.

Recipe 5. Italian style turkey sleeve

To prepare an Italian-style turkey sleeve, it's best to use Parmesan cheese, but other hard cheese will work.

Ingredients

Large turkey fillet

Large tomatoes – 3 pieces

Cheese like mozzarella – 0.3 kg

Parmesan type cheese – 150 g

Sweet peppers – 2-3 large ones, preferably green

Champignons – about 300 g

Raw smoked bacon – several strips

Leek – 1 piece, white part only

Pesto - a couple of spoons

Oregano, curry, parsley, garlic - to taste

Cooking method

Cut a piece from the fillet that looks like a block. Coat it with pesto and garlic passed through a press, wrap it in film and put it in the refrigerator for an hour.

Cut the mozzarella into slices about 3 mm thick, the tomatoes into circles, cut the peppers into halves, remove the seeds, cut the leeks and mushrooms as desired.

Make deep cuts in a piece of meat and alternately insert mozzarella with pepper or mozzarella with tomato. Wrap in strips of bacon in between. It is better to tie a stuffed turkey with white thread. Place the turkey, mushrooms and leeks and herbs in the sleeve. Tighten and bake for an hour and a half at a temperature of 180 degrees. Then remove, cut the sleeve, sprinkle the turkey with Parmesan and return to the oven, increasing the temperature to 220 degrees and sprinkling with Parmesan.

Serve with mushrooms and leeks baked along with the turkey.

Recipe 6. Turkey in a sleeve “Sweet and sour”

Actually, this kind of turkey up your sleeve is not for everybody. But it's worth a try.

Ingredients

Turkey thigh or breast fillet - approximately 700 g

Lemon – 1 piece

Simirenko type apples – 4-5 pieces

Dried apricots - 10 pieces

Raisins – half a glass

Rusks – half a cup (or less)

Walnuts (at least peanuts) – half a cup, peeled and chopped

Butter

Liquid honey - a couple of spoons

Cooking method

Wash the fillet thoroughly and remove the skin (if any). No skin needed.

Grate half a lemon, including the peel, and mix with honey. Spread this marinade over the salted fillet. Cover with cling film and leave in the refrigerator for several hours.

Pass the remaining lemon, dried apricots and raisins through a meat grinder, add chopped nuts and, if the mass is runny, add crackers.

Wash the apples and cut them into slices, removing the core. Melt the butter in a frying pan and lightly fry the slices.

Place the filling on the fillet, wrap it in the fillet, and tie it with white thread.

Place the turkey and apples with the remaining butter in a baking sleeve, tie the sleeve and bake in the oven at 180 degrees for about an hour and a half.

Before serving, remove the string and cut the turkey into portions.

Recipe 7. Turkey in the sleeve “To my beloved husband”

This turkey in the sleeve turns out very tender and tasty. The set of spices can be changed at your discretion, but the honey and mustard must remain, otherwise it will be a different recipe.

Ingredients

Any turkey elements – 1.5 kg

Honey – 3 tablespoons

Mustard – 3 tablespoons

Pepper mixture

Garlic – 2-3 cloves

Khmeli-suneli

Preparing the dish couldn't be easier. Wash all elements thoroughly and singe. There is no need to remove the skin, if any.

Mix honey with mustard and salt and spread mixture over all turkey pieces. Let marinate for a couple of hours.

Take out the marinated turkey, sprinkle with suneli hops, a mixture of peppers and chopped garlic, put it in a sleeve, close it and bake at 190 degrees for about an hour and a half. Then cut the sleeve, increase the temperature and brown the pieces for another 10-15 minutes.

It is good to serve poached green peas or potatoes with this turkey sleeve.

Recipe 8. Turkey in a “Rulle” sleeve

This turkey sleeve can be used as a cold appetizer or breakfast.

Ingredients

Large turkey fillet

Crumb of white bread

Egg – 1 piece

Milk – half a glass

Garlic – 3-4 cloves

Raw smoked bacon - 7-8 strips, depending on the size of the roll

Prunes - about a dozen berries

Walnuts – 10-12 pieces

Ground black pepper

Cooking method

Cut the fillet so that you get a large flat piece. Grind all excess through a meat grinder with white bread crumbs soaked in milk and peeled garlic cloves. If you really like onions, you can also add half a head of onion.

Season the minced meat with salt and pepper, beat in the egg and mix well.

Lightly pound a large piece of turkey and also add salt and pepper.

Grind the prunes using a blender or the same meat grinder. Chop the nuts somewhat larger than into crumbs. Mix nuts and prunes.

Place minced meat on the fillet, prunes and nuts on the minced meat. Roll up. Wrap the roll in strips of bacon and tie with string. Carefully place in a baking sleeve.

Place in the oven and cook for about two hours at 180 degrees.

Cool the roll and eat it cold. However, it can also be served hot.

  • Turkey is a dietary meat, very tasty and healthy. Do not overuse hot spices and mayonnaise. Let the dish remain healthy food.
  • You can get tender and soft meat without even beating the turkey. But if you are going to cook a roll, then you should still beat it a little. Don't forget to cover the meat with cling film.

A simple recipe for the holiday and more

Agree that even this sounds quite solemn, I’m not talking about the very presentable appearance and excellent taste. In addition, such a recipe will not force the housewife to spend long hours in the kitchen: preparing the turkey does not take much time, and all the main work is done by the technician.

Subtleties of cooking

It is best to cook a turkey drumstick in the oven in a sleeve - this way it will have an appetizing crust, and the meat will become tender, soft, and tasty. There is nothing complicated in the process itself, as I said, but it is still worth considering some nuances. Today I’ll tell you how to bake a turkey drumstick in the oven.

Required Ingredients

  • 1 turkey drumstick (weighing about 1 kg);
  • 1 incomplete tablespoon of salt;
  • 2 tsp pepper mixtures;
  • 4-5 cloves of garlic;
  • 1 tbsp. l. vegetable oil;
  • 1 tbsp. l. soy sauce.

Wash the turkey drumstick, carefully inspect it to see if it is well cleaned, and if necessary, remove the remaining feathers.

I had a very large drumstick, weighing 1 kg and about 30 cm long, I didn’t even immediately manage to find unsuitable dishes for it, I had to use a barbecue dish.

Cover the container with the meat with cling film and marinate - either at room temperature for 3-4 hours, or in the refrigerator for 12-15 hours. It’s convenient to marinate in the evening and cook in the oven the next day.

How to bake in the oven?

After marinating, the poultry meat can be cooked. It is most convenient to bake a turkey drumstick in the oven in a sleeve - this way it will be both juicy and beautiful. We place the drumstick in the sleeve, the edges of which are tightly tied.

And put it in the oven, preheated to 200-220 degrees, for 40 minutes. After this time, reduce the degrees in the oven to 150-170 and continue to bake the drumstick, without unpacking the sleeve, for another 50 minutes. After this, we take the meat out of the oven, cut the sleeve and admire the delicious golden brown crust on the drumstick.

Checking the readiness of the meat

This time is enough for the poultry meat to be ready, but I advise you to check it just in case. Pierce the meat with a toothpick or wooden skewer - it should go in easily, and the meat juice released will be clear, not pink.

Place the drumstick on a platter and serve immediately while it is hot. For greater effect, I put it on the table in its entirety, it makes a strong impression on the guests.

There are several secrets in cooking turkey that you need to know so that your dish turns out juicy and tasty. Turkey, as a fairly tender product, does not require harsh heat treatment. Ingredients: turkey drumstick 1-1.2 kg, sour cream (yogurt) - 100 ml, 50 g cold butter, orange or lemon juice and zest, rosemary sprig, a little thyme, 1 tsp. mustard, 50 ml olive oil, salt and spices to taste, a head of garlic, a baking sleeve.

Wash the turkey leg, remove feathers, and dry with a napkin. Make shallow cuts along the bone and rub with salt and pepper.

Grind the spices in a mortar, add olive oil, lemon juice, and mustard. Mix everything well.

Rub the marinade over the turkey and place it in a bag, seal it tightly and put it in the refrigerator for 1 hour. After the time has passed, remove the turkey from the bag and rub with sour cream (yogurt).

Place small pieces of cold butter into the slits. The oil will add extra juiciness to the turkey when roasting.

Preheat the oven to 200 degrees. Place a head of garlic, lemon (orange) zest, thyme, a sprig of rosemary into a baking bag, and add vegetables if desired. Add the remaining marinade, turkey and close the bag. Bake for 15 minutes at 200 degrees, and then 30-50 minutes at 160 degrees. Cooking time depends on the size of the drumstick. When finished, open the bag and let the crust brown.

What a divine aroma throughout the kitchen. Rosemary adds piquancy, lemon softens its pungency, garlic is fragrant, and turkey... - the aroma cannot be described in words! Be careful, the main thing is not to overdry this beauty! 5-7 minutes is enough to form a crust.
